Mixing is not merely balancing levels; further processing is almost always involved. Many old-school engineers talk about just getting it right during the recording process, but most people do not have this luxury. Additionally, in a time where listeners are accustomed to vocals that are pitch-perfect, precisely timed, and at a consistent volume, you're seriously selling yourself short by leaving your vocals raw.
Mastering
Mastering is not a "dark art," nor is it a templated process. Each effect is deliberately added or left out depending on what the specific song and/or album needs. It is essential in ensuring that your songs translate and still sound good outside of a perfectly controlled monitoring environment. Also, different platforms have different delivery requirements, from loudness and peak levels to file formats. These are addressed during mastering.
